Tenderloin à l’Orange
2 ½ lb Pork Tenderloin
1 tsp Vegetable Oil
½ cup Orange Juice
¼ cup Orange Marmalade
1 Tb Cornstarch
2 Tb Lemon Juice
1 tsp prepared Horseradish
½ tsp. Cinnamon
10 oz jar Mandarin Orange segments, drained
1) Slice Pork Tenderloin into 8 pieces. Using a meat
mallet, flatten each piece slightly.
2) Heat oil in pan over medium heat. Add Pork slices
and brown quickly for 1 minute on each side.
3) In a small bowl, thoroughly mix remaining ingredients,
except Mandarin Oranges. Add to pan and cook over medium
heat.
4) Stir constantly until sauce thickens. Simmer for
3-4 minutes.
5) Transfer to warm serving platter and garnish with
Mandarin Orange segments.
